Food Services Manager/ Head Cook
Situated in the beautiful Paradise Valley of Squamish, BC, is the not-for-profit camp for kids, Evans Lake. Evans Lake Forest Education Society operates an outdoor education centre for school groups and community groups, private group rentals, including weddings, and our summer camp program.
Evans Lake is looking for a reliable, enthusiastic, self-starter to work as the Food Services Manager/ Head Cook of our food services team, preparing meals for groups of 40 people, to a maximum of 140 people. Most meals are served family style, with buffets being offered for weddings and adult groups.
RESPONSIBILITIES/ DUTIES:
- Food preparation of all meals including breakfast, lunch, dinner and snacks
- Effectively attend to special diets and food allergies
- Create a weekly menu based on special diets, food allergies and food rotation
- Establish appropriate menus for the various group types
- Management of all kitchen operations including, but not limited to: inventory, ordering, scheduling, training & supervising staff and overseeing proper food storage & food rotation
- Evaluate cost effectiveness, and track labour and expenses to exceed or meet budget
- Proven leadership & strong people skills
- Follow standards for food presentation and quality
- Ensure proper and thorough kitchen safety and sanitation protocols
- Ensure proper maintenance/operation of kitchen equipment
- Other duties as needed in the low season
QUALIFICATIONS/ REQUIREMENTS:
- Minimum 5 years culinary experience (camp style experience an asset)
- 2 years kitchen management experience
- Experience with batch cooking
- Experience training all kitchen positions (dishwasher, 1st cook, 2nd cook, volunteers)
- Food & Safety Certificates (Food Safe Level 1, WHMIS, Food Safe Level 2 an asset)
- Extensive experience working with food allergies and special diet modifications
- Well organized with excellent multi-tasking and communication skills
- Excellent time management skills, a positive motivator, highly adaptable
- Extensive culinary knowledge and a passion for cooking
- Valid driver’s license with reliable transportation
- Must clear a Criminal Record check, with vulnerable sector search
THE POSITION
A full time year round position, with weekly hours dependent on rental group needs
- 40-50 hours/ week in the high season from April to October
- 10-30 hours/ week in the low season from November to March (hours depend on banked OT)
